Lunch is harder for me. I hate to tell you that but obviously it's going to present more of challenge if you don't have the luxury of being at home mid-day. If you do.... NO EXCUSES FOR YOU! Just kidding... but seriously.
Here's what I do if I have time to pack...
- Tuna Salad - I like to mix in onion and green pepper and just eat it on sliced cucumbers.
- Dinner leftovers - Any leftover dinner makes for an easy lunch
- Sandwich & Sweet Potato Chips - I like Target brand Applegate Farms deli meat because it's organic and natural. Be careful with veggie chips as they can also have a lot of bad ingredients. I like the sweet potato chips from Food Should Taste Good brand because they only have 3 ingredients. Sweet Potatoes, Sunflower Oil & Sea Salt. If I run out during lunch I like to go to my local grocery store. They have some really nice salad bars and I start with grilled chicken and just pile on the spinach and veggies. The more the merrier! My salad is usually under $7. You can probably make your own for less but if you're like me you buy salad ingredients and they always go bad.
My grocery store also had a decent deli section and I like to get any prepared sushi or spring rolls that don't have rice. Just watch yourself with the soy sauce or other dips & sauces.
