When it comes to dinner, I like to consider myself a decent cook plus I love to do it. That being said, I'm not always in the mood at the end of a work day. So, the best philosophy is - Keep it simple! A lean healthy meat or fish and tons of veggies! Can't go wrong!

- Coconut Crusted Cod with Rosemary Butternut Squash
- Salsa Chicken & Guacamole
- Turkey Bacon Burgers on a bed of Spinach with Sweet Potato Fries
- Lemon Salmon on a bed of Onions & Peppers with Cauliflower Rice
Asian Chicken Lettuce Wraps
Ingredients
Ingredients
- 1 bunch of leafy lettuce
- 8 oz. boneless skinless chicken breast cubed
- shredded carrots
- alfalfa sprouts
- corn
- homemade ginger dressing (see next recipe)
Instructions
- Cook chicken in a skillet until done
- Scoop into lettuce leaves
- Top with the above toppings / garnishes or other desired items

Asian Ginger Dressing
Ingredients
Ingredients
- 1/2 c minced onion
- 1/2 c olive oil
- 1/3 c rice wine vinegar
- 2 tbsp water
- 2 tbsp minced fresh ginger
- 2 tbsp organic ketchup
- 4 tsp gluten-free tamari
- 1 tbsp raw honey
- 2 tsp lemon juice
- 2 minced garlic cloves
- 1/2 tsp sea salt
- 1/4 tsp ground black pepper
Instructions
- Combine all the ingredients in a blender or food processor until smooth
- For best taste refrigerate for at least an hour to allow the flavors to blend

Coconut Crusted Cod
Serves 4
Ingredients
- 4 white fish fillets (cod, flounder, sea bass, tilapia, etc.)
- 2 eggs
- 1 c coconut flour
- 2 tbsp raw coconut flakes
- 2 tbsp coconut oil
- 2 tbsp desired spices (I used hot shot black and red pepper blend and sea salt)
Instructions
- Crack 2 eggs in a mixing bowl
- Over medium heat add coconut oil to frying pan
- In 2nd mixing bowl combine coconut flour, coconut flakes & spices
- Dip clean thaw fillets in egg
- Coat fillets in flour mixture
- Set fillets in frying pan for about 5-7 minutes per side until desired golden brown
